RECIPE: TWO REFRESHING SUMMER SALDAS WITH GOAT´S CHEESE



Is there something better than a refreshing salad for lunch on a hot summer´s day? I don´t think so - okay maybe some ice-cream, but that doesn´t really count as a proper lunch.
During autumn and winter, I often made a salad with tomatoes and sweet-potatoe cubes and I still have this a lot as it is so easy and quick to prepare, but for a hot summer´s day, having some refreshing fruits like mango or watermelon in your salad instead of some hot sweet potatoe cubes makes all the difference. Especially the combination of watermelon, salad and goat´s cheese is divine, I promise!


WATERMELON AND GOAT`S CHEESE SALAD

Ingredients (serves 2):
  • 400 gr watermelon flesh, cut into large cubes
  • 40 gr salad (I used spinach and salad hearts, but rocket would be delicious, too)
  • 1 lime
  • goat´s cheese, cut into cubes
  • salt and pepper

1. Put the watermelon cubes into a bowl and sprinkle with the juice of the lime. Season with salt and pepper.

2. Add the salad and the goat´s cheese cubes to the mix and gently toss together

3. Serve it in a bowl with some lime wedges


AVOCADO SALAD WITH MANGO AND GOAT´S CHEESE

Ingredients (for 2 servings):
  • 1 red onion
  • 2 tbsp vinegar 
  • 240 g goat´s cheese 
  • 1 lime
  • 1 avocado
  • 3 tbsp olive oil
  • 1 Mango
  • 2 romana salad hearts
  • salt and pepper

1. Peel the onion, cut into pieces and put it into a pan. Add 1 tbsp of vinegar and 500 ml boiling water. Cook the onions while cutting the goat´s cheese into slices.

2. Cut the avocado into slices. Sprinkle it with the juice of the lime and 1 tbsp olive oil. Then, cut the mango into slices as well.

3. For the last step, mix the avocado with the red onions and the mango. Add salt and pepper for seasoning as well as the salad together with some olive oil and vinegar.
