Erinnert ihr euch noch an meinen Wochenendtrip nach Lissabon letztes Jahr? Wie viele andere vor mir habe ich mich nicht nur in die Stadt verliebt, sondern auch ein paar zu viele der populären Pasteis de Nata gegessen. Zu hause hatte ich die Mission, die leckeren Törtchen selbst zu machen, aber dachte, dass es unmöglich sein wird, die Pasteis ohne Geschmackseinbuße selbstzumachen. In meinen Semesterferien im Februar habe ich mich dann doch dran getraut und raus kamen Pasteis de Nata, die genauso aus dem Café von Pasteis de Belém hätten sein können - und sonderlich schwer war es auch nicht. Ich habe dieses Chefkoch-Rezept gefunden und leicht abgewandelt, also: lasst das große Backen beginnen!
Do you guys remember my trip to Lisbon in October? Like many others, I didn't only fall in love with the city but also ate one too many of the typical Pasteis de Nata. I came home with the mission to make them myself, but for some reason thought that it would be nearly impossible to make them myself without any loss in taste. During my semester break in February, I finally gave them a try and I kid you not: they taste exactly like the ones I ate in Lisbon! Also, it comes in handy that its quite easy to make them. I found this Chefkoch recipe and slightly changed it up, so here we go: let the baking commence!
Zutaten für 12 Pasteis:
- 1 Packung Blätterteig
- 500ml Milch
- 190 gr Zucker
- 35g Mehl
- 1 Prise Salz
- 1 TL Butter
- 1 Ei
- 5 Eigelb
- 1 Päckchen Vanille Zucker
1. Steche Kreise aus dem Blätterteig aus (ich habe dafür eine Cookie-Form genommen, ein Glast oder eine Müslischüssel geht aber auch) und platziere die Blätterteigkreise in den Vertiefungen einer Muffin Form. Stelle die Muffin Form anschließend in den Kühlschrank und heize den Ofen auf 225 Grad vor.
2. Für die Fülling, mixe Zucker, Salz und Mehl. Koche anschließend die Milch und die Butter auf. Wenn die Milch kocht, füge die Mehl-Mischung hinzu und rühre kräftig für eine Minute um. Lasse die Mischung erneut aufkochen, devor du sie von der Herdplatte nimmst und kurz abkühlen lässt.
3. Gebe nun das Ei, die Eigelb und den Vanille Zucker dazu und rühre erneut kräftig um, bis eine glatte Masse daraus entstanden ist. Fülle nun die mit Blätterteig ausgelegten Vertiefungen der Muffin Form mit der Füllung.
4. Backe die Pasteis nun für 10 - 20 Minuten bis sie anfangen braun / schwarz auf der Oberfläche zu werden. Enjoy!
Ingredients for 12 Pasteis :
- 1,5 package puff pastry
- 500ml milk
- 190g sugar
- 35g flour
- 1 pinch of salt
- 1 tsp butter
- 1 egg
- 5 egg yolks
- 1 vanilla sugar
2. For the filling, mix the sugar, salt and flour and heat up the milk together with butter. Once the milk is boiling, add the flour mixture and stirr it for a good minute. Bring it to a boil again before taking it off the cooktop and letting it cool down.
3. Now add the egg and the egg yolks together with the vanilla sugar and stirr again until the mixture is smooth. Take the muffin tray out of the fridge and fill the custard filling in the puff pastry mould.
4. Put them in the preheated oven for 10 - 20 minutes. Take them out when the top of the pasteis starts to turn black. Enjoy them with cinnamon on top.
